Easy Fresh Chilli, Basil, Tomato & Crispy Squid Pasta-One for a dinner party


I keep a bag of frozen Squid from the Vietnamese  shop in the freezer and it's perfect for this dish, only £5.50 for a huge bag.

4/5 Large Whole Cleaned Squid Sliced however you like. (Into Rings or chunks) Dry it off on kitchen paper.
Rinse it once defrosted then mix salt, loads of fresh black pepper, lemon zest into either flour or cornflour and add the squid. 

Heat up some oil in a frying pan and add one piece first to make sure it's hot enough- it should fizz.
Cook until golden 2/3mins

Drain on kitchen towel 


Tomato Sauce With Chilli

Finely Chop the following-
Onion Red or White
Red Chilli 1 or 2 depending on how hot you like it
Whole Red Tomatoes (You can put them in boiling water for 3 mins to remove the skins, but I like it with)
3 Cloves of garlic
1 Tin of Tomatoes
1 big teaspoon of sugar
Salt & Pepper to taste
Add Fresh Basil, we've greek basil growing in the garden and it's really fragrant, tasty!


YUMMMMMMMMM 


Squeeze a bit of lemon on top, add a little extra grated zest & Salt & Pepper (If you're obsessed with S& P like I am!!)
